Easy Sushi Recipe Just For Fun

Hello bunnies!!! It's almost Easter and I'm feeling all this pastel vibes that I truly adore. Staying home has been driving me a little bit crazy as I'm sure it has happened to all of you. So, how are you managing to stay sane? 

For myself it has been cooking and spending as much time as I can with family, right now I live with my hubby and we are lucky to be my sister's neighbor, which means I get to see my beautiful nephew this quarantine! We decided to make a Saturday Sushi Day this weekend and let me tell you it was a truly fun activity and so easy and delicious that everyone truly enjoy it.

Let me bring to you the Easiest Sushi Recipe (For Dummies)! It's fresh, light and easy, what else do we wish for? 
Ingredients (4 servings):
For the Sushi
- 500gr Sushi Rice 
- 1/4 cup Rice Vinegar
- 1/4 tbsp sugar
- 4 Seaweed 
- Tsurimi
- Cream Cheese
- 1 Avocado
- 1 Carrot
- 1/2 Cucumber
For the soy sauce
- 2 Oranges
- 1 Lemon
- Soy Sauce 
- 2 tsp honey bee

1. Clean your sushi rice for about 4-5 times (just rinse it through and try to move a little with your hands).
2. Cook the rice with the rice vinegar, sugar and add water (I just placed my hand on the rice and let the water cover my fingers). We used the rice cooker on quick mode so it was pretty easy!! 
3. OK so now that the "hard part" is done, while the rice is cooking just grate the carrot to use it as a side dish and cut into slices the tsurimi, cream cheese, avocado and cucumber. 
4. Once you finish it all, the rice may probably be done by then, just transfer the rice to a bowl and let it cool down for about 20 mins until it's cool enough to handle with your hands.
5. While you're waiting for the rice, prepare the soy sauce! Mix the soy sauce with the orange, lemon and honey, and that's it!
6. Once you're able to handle the rice, spread a layer of rice on the bamboo mat and add on top a seaweed. Then place your desired ingredients. In this case tsurimi, avocado, cucumber and creeme cheese. 
TIP: Make sure to add tiny slices to avoid making your sushi to big (fatty) we want them small!
7. Roll-it up tightly using the bamboo mat (if you don't have one don't worry, just use a parchment paper or plastic wrap which honestly may get a little bit harder and it may not be really tight, but it'll save you for the day!)
8. Use a sharp knife to cut it into tiny pieces and that's it!!! You made your first sushi roll, easy peasy, right?
